Tollington’s, from the team behind The Plimsoll, transforms a former North London chip shop into a vibrant, seafood-focused bar shaped by Spanish and Basque influences. While the space retains its retro, no-frills character—complete with tiled walls and steel counters—the food is notably refined, creating a compelling contrast between setting and execution. The front operates as a lively standing bar, while a small dining room in the back offers a more intimate experience, evoking the spirited, communal energy of San Sebastián. The ever-changing menu highlights high-quality seafood and inventive takes on classic chip shop fare, from cult-favorite chips bravas to dishes like cod cheeks, devilled crab, and piri piri John Dory. A Spanish-leaning drinks list complements the food, with sherry, vermouth, and Estrella on tap.
